Oatmeal Cake

Serving Size: 12-15 servings

1 1/4 cups boiling water
1 cup quick oats
1/2 cup butter
1 cup brown sugar
1 cup sugar
2 eggs
1 1/3 cups flour
1 teaspoon soda
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon cinnamon

Topping:
1/2 cup softened butter
1/2 cup sugar
1/4 cup sweetened condensed milk
1 cup coconut
1/2 teaspoon vanilla

Pour boiling water over oats. Lay 1/2 cup butter on top. Cover; let stand 20 minutes. To this mixture, add brown sugar, sugar, eggs, flour, soda, nutmeg, salt and cinnamon. Bake at 350 for 30-35 minutes.

Mix topping ingredients together and spread on top of cake. Place under broiler until browned.
